Parmesan Biscuits.

This month Ina has sent us her recipe for:

Parmesan Biscuits.

Cooking time: 10 to 12 minutes


  • 100g Chilled Butter
  • 150g Plain Flour
  • 80g Grated Parmesan cheese
  • 1/2 teaspoon of Salt
  • Pinch of freshly Ground Pepper or Cayenne
  • 1 Tablespoon Iced Water
  • 1 Beaten Egg
  • 1 Teaspoon dried Rosemary of Thyme


  • Chop the butter into small pieces and add to the mixer
  • Add all the dried ingredients and the egg
  • ‘Whiz’ until the mixture resembles sand
  • Add the water and whiz until the mixture clumps together to form a moist dough ( add more water if necessary)
  • Form the dough into a ball
  • Roll the dough out on a lightly floured board until 1cm thick
  • Cut into 5cm rounds
  • Place on a non stick baking tray
  • Bake in the oven at 180c or Gas mark 4 for 10 to 12 minutes
  • When cool the biscuits may be stored in an airtight tin for up to 2 weeks.

These biscuits may also be made using grated cheddar or gruyere cheeses.
