This month Ina has sent us her recipe for:
Parmesan Biscuits.
Cooking time: 10 to 12 minutes
Ingredients:
- 100g Chilled Butter
- 150g Plain Flour
- 80g Grated Parmesan cheese
- 1/2 teaspoon of Salt
- Pinch of freshly Ground Pepper or Cayenne
- 1 Tablespoon Iced Water
- 1 Beaten Egg
- 1 Teaspoon dried Rosemary of Thyme
Method:
- Chop the butter into small pieces and add to the mixer
- Add all the dried ingredients and the egg
- ‘Whiz’ until the mixture resembles sand
- Add the water and whiz until the mixture clumps together to form a moist dough ( add more water if necessary)
- Form the dough into a ball
- Roll the dough out on a lightly floured board until 1cm thick
- Cut into 5cm rounds
- Place on a non stick baking tray
- Bake in the oven at 180c or Gas mark 4 for 10 to 12 minutes
- When cool the biscuits may be stored in an airtight tin for up to 2 weeks.
These biscuits may also be made using grated cheddar or gruyere cheeses.
