Mug of Tea Fruit Cake

By popular demand here is the recipe for the very tasty fruit cake that Gill has made a couple of times for us all to try with our coffee at monthly meetings.

Mug of Tea Fruit Cake


  • I Mug of freshly brewed English Breakfast Tea made with 2 bags
  • 1 Mug of Sultanas
  • 1 Mug of Raisins
  • 1 Mug Soft Brown Sugar
  • 1/2 Mug of Mixed Peel (optional)
  • 1 Mug Self Raising Flour
  • 1 Large beaten Egg


  • Soak the soft fruit, brown sugar and mixed peel in the tea with the bags overnight
  • Preheat the oven to 150c, 130c fan oven or gas mark 2
  • Grease and line a 2lb loaf tin
  • Remove the tea bags from the mixture
  • Slowly stir in the self raising flour to make a sloppy mixture that will hold the fruit
  • Mix in the beaten egg
  • Add mixture to loaf tin
  • Bake for 11/2 hours (if the top starts to dry out during baking then cover with foil)
  • Allow to cool in the tin for a few minutes before cooling on a wire rack
