By popular demand here is the recipe for the very tasty fruit cake that Gill has made a couple of times for us all to try with our coffee at monthly meetings.
Mug of Tea Fruit Cake
Ingredients:
- I Mug of freshly brewed English Breakfast Tea made with 2 bags
- 1 Mug of Sultanas
- 1 Mug of Raisins
- 1 Mug Soft Brown Sugar
- 1/2 Mug of Mixed Peel (optional)
- 1 Mug Self Raising Flour
- 1 Large beaten Egg
Method:
- Soak the soft fruit, brown sugar and mixed peel in the tea with the bags overnight
- Preheat the oven to 150c, 130c fan oven or gas mark 2
- Grease and line a 2lb loaf tin
- Remove the tea bags from the mixture
- Slowly stir in the self raising flour to make a sloppy mixture that will hold the fruit
- Mix in the beaten egg
- Add mixture to loaf tin
- Bake for 11/2 hours (if the top starts to dry out during baking then cover with foil)
- Allow to cool in the tin for a few minutes before cooling on a wire rack
