Mary Hunter has sent in this recipe that she got from her Scottish mother in law
Ingredients:
- 1 mug dried mixed fruit
- 1 mug demerara sugar
- 1 mug cold tea
- 2 eggs
- 2 mugs SR flour
- 1 large dessert spoon mixed spice
Method:
- Mix fruit and sugar
- Cover with the cold tea and leave to soak overnight
- Oven temp 150c fan
- Grease and line 2 x1lb or 1x 2 lb bread tins
- Mix together the eggs, flour and mixed spice
- Stir in the soaked fruit, sugar and cold tea
- Bake for about 1 hour for the 1lb loaves longer for the 2lb
- Leave to cool in the tins before turning out
Nice sliced and spread with a little butter
