This month Dee has sent us in her family recipe for ham hock and lentil soup.
Ham Hock Soup
Ingredients:
- small knuckle of ham
- 1x medium carrot, peeled and small diced
- 1x small onion peeled and small diced
- 3oz or 85g red lentils
- 750ml Water
- ground black pepper to taste
- 1x celery stalk
- 1x tsp Worcester sauce
Method:
- Soak the ham hock overnight and then rinse in cold water
- Place the ham hock with all the other ingredients in a large pan and bring up to the boil (skim if necessary)
- Cover and simmer for 2 hours
- Remove the ham hock from the soup
- Remove all the meat from the bone and chop
- Add the meat back to the soup
- Blend into a smooth soup if required
Serve with a thick slice of your favourite bread.
