Recipe of the Month 9

This month Dee has sent us in her family recipe for ham hock and lentil soup.

Ham Hock Soup

Ingredients:

  • small knuckle of ham
  • 1x medium carrot, peeled and small diced
  • 1x small onion peeled and small diced
  • 3oz or 85g red lentils
  • 750ml Water
  • ground black pepper to taste
  • 1x celery stalk
  • 1x tsp Worcester sauce

Method:

  • Soak the ham hock overnight and then rinse in cold water
  • Place the ham hock with all the other ingredients in a large pan and bring up to the boil (skim if necessary)
  • Cover and simmer for 2 hours
  • Remove the ham hock from the soup
  • Remove all the meat from the bone and chop
  • Add the meat back to the soup
  • Blend into a smooth soup if required

Serve with a thick slice of your favourite bread.
